Are you familiar with Bob's Red Mill? It's a great site to shop for baking supplies, including gluten-free flours and mixes, various nuts, oats, grains, seeds and much more! I was recently asked to participate in a baking promotion, and of course I said yes! I received a bag or Bob's Red Mill Coconut Flour, and had to come up with a recipe. This was my first time ever baking with coconut flour, so you can be sure I researched for a while before trying anything! Basically (from what I read, anyways) coconut flour can be substituted for other flours when baking, but due to the extreme dryness of the flour, you usually have to add extra liquids such as eggs or milk. So, I decided to change up a brownie recipe, and see how it turned out with coconut flour.
I was honestly surprised at how the brownies turned out. I'm really not a coconut fan, and had expected to dislike the flavor. However, it really only added a tiny hint of coconut, and I actually liked it! The consistency is very moist and chewy, just the way I like my brownies. I let the family try it before telling them it was made with coconut flour, and not a single person said anything about a different taste! I actually caught E sneaking some bites in the kitchen, even after he heard they were "Coconut brownies" :)

Double Chocolate Brownies
- 1/2 cup Coconut Flour
- 1/3 cup Vegetable Oil
- 1/2 cup Unsweetened Baking Cocoa
- 1 cup Sugar
- 1/3 cup Butter, softened
- 4 Eggs
- 1 cup Chocolate Chips
- 2/3 cup Chopped Walnuts (optional)
Preheat oven to 350°F. In small bowl, combine cocoa and flour; set aside. In large bowl, mix vegetable oil, sugar and butter. Add eggs; stir. Add dry ingredients and mix just until blended. The batter will be somewhat stiff. Mix in chocolate chips and walnuts. Pour into a greased 8×8 or 9×9 pan (depending on how thick you like your brownies) and bake for 30 minutes. Enjoy!
